How does Shoonya Farms make its pure Ghee?
Do you know that to make 1 kg of pure ghee requires 25-30 litres of desi cow milk? That's right! The traditional method of making ghee is quite elaborate using the Bilona process and we do it while complying with all standard quality control norms to "extract" the liquid gold. First, A2 milk from pure-bred Gir cows is cultured. Then, curd is churned through the bilona process. Finally, a fire is used to heat the butter. Ghee made in this traditional way does wonders for one’s health and well-being.
Step-1: Boiling
First, we get A2 milk from pure-bred Gir, Rathi and Desi cows. The milk is brought to a boil and then left to cool.
Step-2: Culturing
The boiled milk is converted into curd by culturing. The milk is kept overnight in a pot to transform into curd.
Step-3: Churning (Bilona)
Curd is churned both clockwise and anti-clockwise in order to get thick, fresh butter, which is then collected for the next step.
Step-4: Heating
The thick butter is melted over a fire. In the course of the heating, the butter gets clarified and a layer of leftover brown solids settle at the bottom of the vessel.
Step-5: Cooling
At this point, you can smell the fragrant aroma of pure ghee as it turns golden-yellow. The elixir is filtered using a strainer and stored in glass jars, ready for dispatch.
