Gir Ghee Produced with Bilona Method - Know the Facts

Consuming pure things is a boon nowadays, considering the number of impurities injected into every food product. Gir ghee is one such product which is produced without any chemicals and pesticides from pure A2 milk. Thus it is certainly a beneficial product if you're planning to add the same to your daily diet charts. Ghee has always been an integral part of our diet. Adding ghee to the Indian cuisines not only improves the taste but also helps increase the individual's digestion power.  Hence, consuming Gir cow ghee online has increased because people are becoming more health conscious nowadays and opting for more organic food items. The curd for the preparation of Gir ghee is churned through the bilona process. Read on to know more about this special process of producing Gir ghee.  What is the bilona process of Gir ghee production? Look at the different steps of Gir ghee production using the Bilona method.  Step 1: Procurement of ghee Gir cows are generally fed with natural fodder free from chemicals and pesticides. A2 milk, extracted from the Gir cows, is thus extracted in the purest form. The first step of the bilona process is to boil the milk and ensure that the milk is disinfected completely. Step 2: Conversion in curd  In the next step, the boiled milk is cooled to room temperature, and curd is added to the same. The solution is kept in an earthen pot overnight, which helps to get the solution converted into curd in the morning.  Step 3: Churning  The speciality of the bilona process is to use a wooden churner called the bilona to churn the curd and extract the ghee. This is a lengthy process; gradually, the ghee is extracted and turned into butter.  Step 4: Heating  Later at a medium temperature, the ghee is separated by boiling the same. While heating the ghee, the aromatic smell and the same yellow colour is generated.  Why is the bilona process important? The bilona process is the age-old traditional method of producing Gir ghee. In this process, a manual whipping method is used by beating the curd with a wooden beater and churning the butter or ghee. Since it is a manual process and does not involve any chemical interference, the process is lengthy and very few amounts of butter or ghee are produced from large amounts of curd. Thus the cost of Gir ghee produced using bilona method is also high.
